From 'Ask the Chief'

Warm weather brings more outdoor activities that include cooking and picnics.  But remember, summer heat and open air cooking can add to the risk of getting sick from contaminated foods known as "food-borne illness." Each year 9,000 die in the US and many more become sick as a result of food related illnesses, according to government estimates. Those most at risk are the very young and older adults. Many people never know they've contacted a food-borne illness because symptoms are often mistaken for the stomach flu.   Symptoms of food-borne illness can range from a mild upset stomach, to cramps, vomiting, diarrhea, chills or fever.

You can avoid contracting or spreading food-borne illness by handling all food carefully.  Take extra precautions when you prepare for a picnic or a backyard barbecue, keeping food safety in mind. Be sure all work surfaces and utensils are clean before preparing food.  Never use the same cutting board, platter or utensil used for raw meat with other foods such as vegetables.  The bacteria present in raw meat or juices can contaminate other foods.  Wash your hands often in warm soapy water.  This is especially important before preparing foods and after handling raw meat, poultry and seafood.

Also remember, contaminated food does not necessarily look or smell bad. It's better to be safe --when in doubt throw it out.

Safety Tips

Protect you, your family and friends by following these simple steps on food safety.

·         Keep it clean; wash your hands and food contact surfaces often.

·         Defrost foods safely in the refrigerator, not at room temperature.

·         Keep foods separated; don't cross contaminate.

·         Refrigerate foods promptly.

·         Keep hot foods hot and cold foods cold.

·         Cook food to proper temperatures.
